Chocolate Souffle




Recipe in English:

Ingredients:

    -Butter 1 tbs

    -All-purpose flour 1 & ½ tbs

    -Full Cream Milk ¾ Cup

    -Vanilla essence ½ tsp

    -Cocoa powder 2 tsp

    -Dark chocolate grated 130g

    -Egg yolks 2

    -Anday ki safedi (Egg whites) 3

    -Sugar 4 tbs 

    -Salt 1 pinch

    -Butter soft

    -Sugar

    -Cocoa powder 

Directions:

    -In a saucepan, add butter & let it melt.

    -Add all-purpose flour & mix well on low flame for 2 minutes.

    -Add milk & cook while whisking until its slightly thickens.

    -Add vanilla essence, cocoa powder & whisk well.

    -Add dark chocolate & mix on low flame for a minute until chocolate melts.

    -Remove from heat, transfer to a bowl & whisk for a minute to lower temperature.

    -Add egg yolks & whisk well.

    -Let it cool completely & set aside. 

    -In a bowl, add egg whites & beat well.

    -Add sugar, salt & beat well until stiff peaks form (2-3 minutes). 

    -Add 1/3 cup of egg whites in chocolate mixture & fold with the help of spatula.

    -Now add whole mixture in remaining egg whites & fold gently until just combined. 

    -Grease souffle ramekins with soft butter, sprinkle sugar, coat well with sugar and tap out excess sugar.

    -Transfer mixture to ramekins, taking care not to get batter on top edge of ramekin and smooth top.

    -Place ramekins on a baking dish & bake in preheated oven at 200C for 15-16 minutes (makes 4).

    -After baking, sprinkle cocoa powder & serve immediately.

    -Makhan 1 tbs

Directions:

    -Saucepan mein makhan dal ker melt ker lein.

    -Maida dal dein aur halki ancch per 2 minutes kliya ache tarhan mix ker lein.

    -Doodh dal ker musalsal whisk kertay rahein aur garha ho janay tak paka lein.

    -Vanilla essence & cocoa powder dal ker ache tarhan whisk ker lein.

    -Dark chocolate dal dein aur halki ancch per chocolate melt ho janay tak ache tarhan mix ker lein.

    -Chulhay sa hata lein aur bowl mein dal ker ek minute kliya temperature kum ho janay tak whisk karein.

    -Anday ki zardi dal ker ache tarhan whisk ker lein.

    -Thanda ker lein & side per rakh dein.

    -Bowl mein anday ki safedi dal ker ache tarhan beat ker lein.

    -Cheeni aur namak dal dein aur stiff peaks form hunay tak ache tarhan beat ker lein (2-3 minutes).

    -1/3 cup egg whites ko chocolate mixture mein dal dein aur spatula ki madad sa fold ker lein.

    -Ab whole mixture ko remining egg whites mein dal ker spatula ki madad sa fold ker lein.

    -Souffle ramekins ko soft makhan sa grease ker lein,cheeni chirak ker ache tarhan coat ker lein aur tap ker ka excess to remove ker lein.

    -Mixture ko ramekins mein dal dein.

    -Ramekins ko baking dish mein rakh dein aur preheated oven mein 200C per 15-16 minutes kliya bake ker lein (makes 4).

    -Baking ka bad cocoa powder chirak dein aur foran serve karein
